There are tons of recipes out there for the best chocolate chip cookies and I don't claim to have tried them all, but the ones that I have, were always missing one thing or another. The one thing that they all had in common, was that they WOULD NOT FLATTEN! The pictures would show so, but not the result!!! *sigh*
Now, don't get me wrong, the taste was never an issue, but for me, the perfect chocolate chip cookie means a flat yummy buttery chocolatey cookie that is crunchy on the outside but chewy on the inside.
FLAT.
It's important that the cookies are flat. NOT by me flattening them before baking, no no! Flat, by melting and spreading all on their own.
Well, THESE cookies are. They spread and flattened all on their own like the big cool kids do. And they are GOO-OO-OO-OOD!!!!! *drool*
Make them, I PROMISE you, scout honor, that this is the last recipe that you'll ever need.
Chocolate cinnamon chip cookies (makes 46 three-inches cookies)
(from original recipe of The Silver Palate)
- 1/2 pound (2 sticks) softened butter
- 1 cup brown sugar
- 3/4 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups unbleached all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 cup semisweet chocolate chips
- 1/2 cup cinnamon chips (I used Hershey's)
Heat oven to 350 degrees & line your cookie sheet with parchment papers or use a silpat if you have. Cream butter and both sugars together until light and fluffy. Add eggs and vanilla and mix well. Sift dry ingredients together and stir in, mixing thoroughly. Add chocolate chips & cinnamon chips to batter and form cookies by using a small scoop. I used one of 1 & 1/2 inch diameter.
Make sure to space them out on the sheet. About 2-3 inches between them. Bake for 10-15 minutes, or until the edges are golden brown. Let cool on sheet before transferring them onto rack to cool completely.

OMG, I found your post via FoodGawker and those ever-so-flat chocolate chip cookies caught my eye.
You can't imagine how excited I was to read your post about cookie that flatten themselves! I've spent the best part of my life looking for this elusive recipe. I've been pressing cookies down all my life mid-bake and if this recipe is indeed "The One That Flattens All By Itself" then I would be over the moon!
I hate cakey cookies that dome up.

Tramie, as promised in my previous comment, I made these cookies this morning from your recipe and you're right, they are perfectly flat! Watch me fly over the moon!
I didn't have to squash them at any point mid-bake at all. They were on 'self-flattening auto-pilot! So cool. They were not cakey but chewy and even crisp when I baked some of them for a bit longer.
We ate so many off the cooling rack.
I used some Valrhona 67% I chopped up and omitted the cinnamon chips because we don't have them around here. I also added some chopped pecans to the dough.
They're really yummy and the recipe's a keeper.

Wow! I came across this on pinterest, looking for a flat not cakey choco chip cookie recipe with both the crunchy & chewy factor & I couldn't have been more pleased! thank you for sharing this. This is now & forever my go to choco chip cookie recipe. I did not have the cinnamon chips but thought the cinnamon factor was a great & different idea, so I added about a teaspoon of ground cinnamon & they taste delicious!

i came across this post after google searching "cinnamon chips" -- i had bought a bag and wasn't sure what to do with them. i just made these cookies and they are fantastic! i may never go back to making plain old chocolate chip cookies.

Last week, for my boyfriend's birthday, I made Snickerdoodle cookies and they went over so well that I was going to make some more this week for my dad's birthday. Well, we love cinnamon and we had some cinnamon chips in the pantry that were begging to be used. I thought about making the Snickerdoodle base and adding the chips to it...but then I though about adding chocolate chips, because my dad LOVES chocolate. So I figured I would make the base more like a regular chocolate chip cookie...so I wound up searching to see if anyone had done it before, and ran across this recipe. I made them up and they cooked beautifully in 11 minutes - crunchy on the outside and wonderfully gooey in the middle, with just enough chewiness in between. My dad has yet to sample them, but I can tell you that he will love them! Amazing! Thanks so much for posting this recipe!
